Almond Flour Pancake Recipe

When you need to satisfy a pancake craving while on a gluten-free diet, you don’t have to ignore it! We created this almond flour pancake recipe to have the same tasty qualities as regular pancakes, but without gluten. These pancakes are just as light and fluffy as pancakes made from all-purpose flour!

Equipment

  • 2 large mixing bowls
  • Rubber spatula
  • 10-inch nonstick pan
  • Wire sifter
  • Wire whisk

Ingredients for Almond Flour Pancakes

  • 2 ½ cups almond flour
  • ½ tsp sea salt
  • 2 tsp baking powder
  • 4 eggs
  • ½ cup almond milk or water
  • 2 tsp vanilla extract
  • 2 tbsp pure maple syrup (with more if you intend to serve your pancakes with some)
  • 2 tbsp butter or olive oil for greasing the pan

Instructions: How to Make Almond Flour Pancakes

  1. In one mixing bowl, add your dry ingredients (almond flour, baking powder, and salt) and whisk them together until they’re fully combined.
  2. In another mixing bowl add your wet ingredients (almond milk, maple syrup, vanilla extract, eggs) and whisk those together until they are also fully combined.
  3. Add your wet ingredients to your bowl of dry ingredients and stir until they are evenly combined. Results may vary depending on the ingredients you use, but if you think your batter is too thick you can add more almond milk 1 tbsp at a time to reach your desired consistency and if you think your batter is too thin you can add 1 tbsp of almond flour at a time.
  4. Heat a pan or skillet over medium-low heat and lightly grease the pan with butter or olive oil. Keep your heat lower to ensure the middle of your pancakes cook through without burning the edges. Once your surface is fully heated, use a scoop to get pancake batter onto the pan and cook your pancakes for about 1 to 2 minutes on each side. Almond pancakes cook differently than regular pancakes made from all-purpose flour, they tend to be more delicate so it’s best to make smaller pancakes so they don’t break when you flip them.
  5. When your pancakes are all ready, serve them with your favorite pancake toppings. We like maple syrup, butter, powdered sugar, fresh berries, and whipped cream, but there are plenty of other options out there!
