Blueberry Pancake Recipe Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 5 tsp white vinegar
  • 1 large egg
  • 2 tbsp melted butter
  • 1 cup fresh blueberries

Instructions: How to Make Blueberry Pancakes

  1. Make your buttermilk in a small mixing bowl by adding milk and vinegar and whisking them together. Let your mixture sit for two minutes
  2. While your buttermilk mixture is sitting, get out your medium mixing bowl and add your dry ingredients (flour, baking powder, baking soda, sugar, and salt) to it and whisk until they are evenly combined.
  3. Add your buttermilk mixture to your dry ingredients alongside the egg, melted butter, and vanilla extract. Whisk everything together, but make sure you don’t over mix your batter or it will change the texture of your pancakes; it’s okay to have some lumps!
  4. Over medium heat, set up your hot surface whether that be a griddle or a non-stick pan, and lightly grease it with butter.
  5. Use a ladle or measuring cup to pour 1/3 cup scoops of batter onto your hot surface. Arrange a handful of blueberries on your batter in the arrangement you want it (you may prefer to add a lot of blueberries to really add the flavor or you may want a less is more approach) and let your pancake cook for 1 to 2 minutes. You will know it’s ready to flip when bubbles form on the surface and the bottom is a golden brown color. Then you can cook the opposite side until it has a similar golden brown color. This may take 1 to 2 minutes.
  6. Serve!
