The Best Fluffy Pancake Recipe

These fluffy pancakes are simple and require only a few ingredients. All of which you probably have in your pantry right now so there’s no need to go running around picking up ingredients, which means they will be ready in about the same amount of time it takes to go pick up pancakes from a diner. These pancakes have the perfect amount of fluff without being too cakey!

Equipment

  • Whisk
  • Sifter
  • Rubber spatula
  • 2 large mixing bowls
  • Nonstick sauté pan

Ingredients for Fluffy Pancakes

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • ½ tsp baking soda
  • 4 tbsp sugar
  • 1 tsp salt
  • 1 ½ cups milk
  • ¼ cup melted unsalted butter
  • 1 large egg
  • 2 tsp vanilla extract

Instructions: How to Make Fluffy Pancakes

  1. Grab one of your large mixing bowls and add your baking powder, baking soda, flour, salt, and sugar. Whisk them together to evenly combine them.
  2. In your second large mixing bowl add your melted butter, milk, vanilla, and egg. Whisk them together until they’re well combined.
  3. Combine your two bowls by pouring the wet ingredients into your dry ones and folding them together until they reach a thick and creamy consistency. It’s okay if your batter has lumps in it because you don’t want to overmix it. If you think your batter is too thick, add 1 tbsp of milk at a time until you reach the desired consistency then place it aside to rest.
  4. While your batter rests, set your non-stick pan over medium-low heat or set a griddle to the same temperature. Once the surface has heated up, lightly grease your surface with butter.
  5. Use a ladle or scoop to place some pancake batter onto your warm surface and let it cook for about 2 minutes or until bubbles form on the surface. At that point, you can use your spatula to flip it over and cook the other side for 1 to 2 minutes or until golden brown. Continue doing this until your batter is gone or you’ve reached your desired number of pancakes, whichever comes first.
  6. Serve with your favorite toppings.
