Ingredients for Vegan Pancakes
- 1 ½ cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup water
- 1 tsp vanilla extract
- 1 cup non-dairy milk (oat milk, rice milk, coconut milk, almond milk, or whatever your preference)
- Optional: 1 ½ tbsp avocado oil (you can omit this ingredient if you want oil-free pancakes)
Instructions for making Vegan Pancakes
- In a mixing bowl, add your dry ingredients: flour, sugar, baking powder, and salt. Whisk them together until fully combined.
- Add in your water, oil, vanilla, and non-dairy milk and stir to combine. It’s okay if your batter is lumpy, you don’t want over-mixed batter or your pancakes won’t end up fluffy.
- Let your batter rest for several minutes while you heat up a large griddle or skillet to medium heat. If you prefer, you can oil your hot surface with vegan butter or coconut oil.
- Ladle about ½ cup of pancake batter and cook until bubbles form on the top of your pancakes then flip and cook the opposite side until it is also golden brown. It should take an average of 1 to 3 minutes. Repeat as necessary with the rest of your batter and if you find you have extra batter after making your preferred number of pancakes, make sure you seal and store the excess in an air-tight container and keep it in your refrigerator.
- Serve your pancakes with pure maple syrup, vegan butter, and a side of your favorite fresh fruit for a delicious and balanced breakfast.
